About Microgreens
What are microgreens?
Microgreens are baby plants that fall between the stages of sprouts and baby greens. They are harvested once the first leaves (aka cotyledons) are mature and just as true leaves appear.
Why should I eat microgreens?
Microgreens are small, but they are nutrient dense. All microgreens are different, but most contain high levels of potassium, iron, zinc, magnesium and copper. They are also found to provide antioxidants. Because they are smaller versions of whole plants, the concentration of nutrients is higher in microgreens than mature plants.
Why microgreens over sprouts?
Microgreens are found to have less risk of contamination from bacteria over sprouts because they are grown with less humidity. Sprouts and microgreens have been found to have very similar nutrient content…and microgreens are way more fun to eat!
How do I use microgreens?
Microgreens can be used in many different ways. They can be used in salads, sandwiches and wraps, sauteed in stir fry, blended into smoothies, as “vegetable confetti” on pretty much any dish, adding a beautiful pop of color and additional nutrients.
